Black Garlic Butter (Easy Farmers Market Recipe)

One of my favorite finds from my first trip to the Frankfort Farmers Market this season was black garlic—and if you’ve never tried it before, this is the perfect place to start.

Black garlic has a deep, slightly sweet, almost balsamic-like flavor that transforms simple dishes into something special. The easiest way to use it? Blend it into butter.

This black garlic butter is rich, spreadable, and instantly elevates just about anything you add it to.

What Is Black Garlic?

Black garlic is regular garlic that’s been slowly aged until the cloves turn soft, dark, and caramelized. The flavor becomes mellow, slightly sweet, and full of umami—completely different from raw garlic.
Ingredients
    • 1 stick unsalted butter, softened
    • 3–4 cloves black garlic
    • Pinch of salt
    • Optional: lemon zest or fresh herbs
Instructions
    1. Mash the black garlic cloves into a smooth paste.
    2. In a bowl, mix with softened butter and a pinch of salt.
    3. Add lemon zest or herbs if using.
    4. Stir until fully combined.
    5. Transfer to a jar or shape into a log and refrigerate until firm. I bought a cute butter mold from Amazon and am linking here
Ways to Use Black Garlic Butter
This is where it really shines:
    • Spread on warm sourdough bread
    • Melt over roasted vegetables
    • Add to grilled steak or chicken
    • Toss with pasta for a quick sauce
    • Use on corn or mashed potatoes

Storage

Store in the refrigerator for up to one week or freeze for longer storage. The mold I purchased is perfect because it allows me to pop out one stick at a time and keep the rest safely frozen.

Final Thoughts

If you spot black garlic at your local farmers market, don’t pass it up. This simple butter is one of the easiest ways to turn a unique ingredient into something you’ll use all week.
